At the Ritz-Carlton hotel in Honolulu, Hawaii (where the population is 16% Japanese), the restaurant Sushi Sho has become a hotspot for fine diners. It offers an omakase menu featuring several dozen types of crustaceans and fresh fish.

 

Rice temperature under high surveillance

The restaurant, a point of reference in high-end Japanese cuisine in Hawaii, is run by Keiji Nakazawa. Considered as one of the most talented sushi chefs in the world, and particularly known for his edomae-style sushi (where the rice is cooked at different temperatures before being seasoned with vinegar), Keiji Nakazawa has had a passion for cooking since he was a teenager. During a long trip across Japan, he trained with sushi masters before opening his first restaurant near Tokyo.

Sushi Sho’s invigorating menu is composed of high-quality ingredients like oysters ‘revisited’ or succulent tuna tartares. As the restaurant is often fully booked, those wishing to try Keiji Nakazawa’s sushi are advised to book several months in advance: the restaurant, where diners sit at the counter, has just 16 seats.
