In London, within the walls of an old Edwardian house, chefs Masaki Sugisaki and Tomonari Chiba started out by serving pure, traditional Japanese izakaya cuisine. The cosy but pared-back atmosphere meant that the products were always showcased.
Over the years, the pair began to draw inspiration from various European specialities and developed what they refer to as ‘Japanese tapas.’ In other words, this is fusion cuisine, with dishes such as sea bass carpaccio with sashimi tacos. Success was not long in coming, but Dinings has not abandoned the classics like wagyu beef and sushi.
